Healthy Squid Recipe

Here is a delicious way to prepare a healthy squid dish!

Health Squid Ingredients

  • 800 gr. squid , cleaned
  • 5-6 tbsp. olive oil
  • Salt
  • 1 onion
  • 2 tbsp fresh spring onions
  • 2 cloves garlic
  • 1 bunch of myronia (alternative - 1 leek)
  • 1/4 bunch of dill
  • 50 gr. Ouzo
  • 1 tbsp tomato paste
  • 300 gr. water
  • Pepper
  • 1 kilo of spinach
  • Lemon zest , from 1 lemon
  • Lemon juice , from 1/2 lemon

How to Prepare This Healthy Squid Dish

  • Place a deep frying pan over high heat and add regular salt.
  • Cut the squid into small pieces and put them in the pan together with 2-3 tbsp. olive oil.
  • Cut the onion into large pieces and put it in the pan.
  • Finely chop the white part of the spring onions and garlic. Put them in the pan and mix.
  • Chop the stems from the myrtle and dill and put them in the pan. Extinguish with the ouzo and let it evaporate.
  • Add the pulp, water, salt, pepper and spinach. Mix the items together.
  • Cover with the lid and simmer on low heat for 40-50 minutes.
  • Finely chop the remaining myronia, dill, and the green part of the onions. Add them to the pan.
  • Add the zest and juice of the lemon, 3 tbsp of olive oil, and pepper. Mix the items together.
  • Serve with pepper, lemon slices, and olive oil.

..And the Not so Healthy Part

Serve with fries sprinkled with Kostas Flower of Salt! ;-)
