
Greek Briam Recipe

We are focusing on a Greek dishes this month, kicking off with BRIAM - Baked Greek vegetables served with feta! Yum! It’s super easy to make. And it is suitable for vegetarians.
Briam Ingredients
- Potatoes
- Eggplant (aka aubergine)
- Carrots
- Zucchini (aka courgette)
- Peppers (Red, Yellow, or Orange)
- Onion
- Garlic
- Tomatoes
- Tomato paste
- Olive Oil
- Black pepper
- Herbs: oregano & thyme
- Honey
- Kostas Flower of Salt
How to Make Greek Briam
- Preheat the oven to 180ο C (350ο F) - set to fan.
- Cut potatoes, eggplant, carrots, and zucchini in 1cm slices, and add them to a bowl.
- Cut the peppers into pieces and add them to the bowl.
- Cut the onion into four pieces and separate its' layers. Add them to the bowl with the rest of the vegetables. Add the garlic finely chopped and set them aside.
- In another bowl grate the tomatoes, add the tomato paste and mix. Add 80g of olive oil, Kostas Flower of Salt, pepper, oregano, thyme, and honey.
- Mix all the items together.
- Pour the sauce over the vegetables and mix. Transfer to a baking pan, add 20g olive oil, and cover with aluminum foil.
- Roast for 30-40 minutes.
- Uncover, and roast for another 20-30 minutes.
- Serve with feta cheese, oregano, olive oil, pepper, and bread.
