This recipe is a vegetarian and vegan delight! Our cauliflower, chickpea and sweet potato curry is healthy, easy to make, and tates delicious!
Curry Ingredients
- Cauliflower x 1 head
- Sweet potato x 1
- Chickpeas x 2 tins
- Large onion x 1
- Cloves garlic x 2
- Ginger x 1 thumb size piece
- Coconut milk x 1 tin
- Lime leaves x 5
- Coriander powder
- Cummin powder
- Mustard seeds
- Kostas flower of salt
How to Make Cauliflower, Chicpea & Sweet Potato Curry
This dish can be cooked in a slow cooker for ease - or if you prefer to cook on the hob you can simmer for 1 hour instead.
- Chop the onion and fry it in olive oil.
- Once the onion is translucent, add the chopped garlic and ginger.
- Fry for few minutes.
- Add mustard seeds for 1 minute
- Put the food into the slow cooker along with pre chopped cauliflower and all of the other ingredients. Add 1 cup vegetable stock and cook on high for 4 hours.
We like to serve with brown rice and a sprinkle of flower of salt.
Optional extra: serve with an egg on top!
