Cauliflower, Chicpea & Sweet Potato Curry Recipe

This recipe is a vegetarian and vegan delight! Our cauliflower, chickpea and sweet potato curry is healthy, easy to make, and tates delicious!

Curry Ingredients

  • Cauliflower x 1 head 
  • Sweet potato x 1
  • Chickpeas x 2 tins
  • Large onion x 1
  • Cloves garlic x 2
  • Ginger x 1 thumb size piece 
  • Coconut milk x 1 tin
  • Lime leaves x 5
  • Coriander powder
  • Cummin powder
  • Mustard seeds
  • Kostas flower of salt

How to Make Cauliflower, Chicpea & Sweet Potato Curry

This dish can be cooked in a slow cooker for ease - or if you prefer to cook on the hob you can simmer for 1 hour instead.

  1. Chop the onion and fry it in olive oil.
  2. Once the onion is translucent, add the chopped garlic and ginger.
  3. Fry for few minutes.
  4. Add mustard seeds for 1 minute
  5. Put the food into the slow cooker along with pre chopped cauliflower and all of the other ingredients. Add 1 cup vegetable stock and cook on high for 4 hours.
We like to serve with brown rice and a sprinkle of flower of salt.
Optional extra: serve with an egg on top!
